I've been thinking of upgrading to a 25x8x12 (front) and 25x10x12 (rear) tires.. if I buy a 12 inch wheel will it fit front and rear due to one being 8x12 and one 10x12??

Yes. Use 12" x 7" 4+3 and you will be fine.
